　　餐飲外賣相較于傳統(tǒng)堂食是一門時間和空間都在變的生意。當(dāng)一份外賣經(jīng)門店打包，由外賣員送至消費(fèi)者的手上，外賣包裝作為餐飲品的承載容器需經(jīng)得起“時間”和“空間”的考驗。時間上，餐飲品在一定時間內(nèi)送至消費(fèi)者手上時仍需保持較好口感，這對包裝的保溫、透氣、耐油等性能提出了較高要求；空間上，由于用餐場景的變化，外賣包裝需確保在一定運(yùn)輸距離內(nèi)(通常為3-10km)防止餐飲品撒漏，一定程度上還需承擔(dān)品牌宣傳的功能。但在現(xiàn)有的包裝技術(shù)水平下，能夠完全滿足上述幾點(diǎn)的包裝通常會成本較高。

　　There are many types of modern catering, and businesses need to choose different food delivery packaging according to the characteristics of different dishes. Through interviews and research with catering businesses, suppliers, and consumers, takeaway packaging is generally measured from the following four dimensions: performance, appearance, price, and environmental protection. How to balance the above four points is the key for businesses to choose takeaway packaging.

　　提到外賣包裝商家和消費(fèi)者都關(guān)注什么?

　　What are the concerns of both food delivery packaging merchants and consumers?

　　通過線上問卷調(diào)查的方式，我們收集了來自1678個商家和524名消費(fèi)者關(guān)于外賣包裝的相關(guān)反饋。其中，參與調(diào)研的商家涵蓋了本次報告的六大類菜品，消費(fèi)者主要為輕中度外賣使用群體（問卷調(diào)研中，67%的消費(fèi)者每周點(diǎn)1-5次外賣）。

　　We collected feedback on takeaway packaging from 1678 merchants and 524 consumers through an online questionnaire survey. Among them, the surveyed merchants covered the six major categories of dishes in this report, and the consumers were mainly the light to medium delivery user group (in the questionnaire survey, 67% of consumers ordered 1-5 takeout times a week).

　　本次參與問卷調(diào)研的商家涵蓋的品類有：(1) 冰涼甜點(diǎn)、水果撈；(2)輕食、沙拉、健康餐；(3)西式點(diǎn)心、蛋糕、糕點(diǎn)；(4)咖啡、茶飲、奶茶、果汁；(5)餃子、包子、壽司、餅類；(6)粥品。

　　The categories covered by the participating merchants in this survey include: (1) cold desserts and fruit scoops; (2) Light meals, salads, and healthy meals; (3) Western style Dim sum, cake, pastry; (4) Coffee, tea drinks, milk tea, fruit juice; (5) Dumplings, buns, sushi, and pancakes; (6) Congee.

　　調(diào)研中發(fā)現(xiàn)，商家最關(guān)注包裝的性能，環(huán)保、外觀和成本次之。超70%的菜品出餐溫度和最佳食用溫度在常溫以上，這對商家使用的餐飲包裝提出了較高的耐熱性和保溫性要求。盡管商家認(rèn)為綠色包裝有利于提升品牌價值和辨識度，但成本是制約其推廣與使用的因素之一。另外，商家認(rèn)為包裝的外觀對品牌宣傳有重要的作用。

　　In the survey, it was found that businesses are most concerned about the performance of packaging, followed by environmental protection, appearance, and cost. More than 70% of dishes are served at temperatures above room temperature, which requires high heat resistance and insulation for the catering packaging used by businesses. Although businesses believe that green packaging is beneficial for enhancing brand value and recognition, cost is one of the factors limiting its promotion and use. In addition, merchants believe that the appearance of packaging plays an important role in brand promotion.

　　商家最關(guān)注包裝的安全性、密封性和保溫性。符合國家食品安全要求是所有商家最為關(guān)注的，也是商家選購包裝的底線。不同的菜品對包裝的需求不同，粥品的最佳食用溫度更高，對包裝的耐熱性和隔熱性提出了更高要求；輕食、沙拉、健康餐更關(guān)注包裝打包的便捷程度；西式點(diǎn)心、蛋糕、糕點(diǎn)品類還關(guān)注包裝的挺度；含湯水的菜品更關(guān)注包裝的密封性，需實(shí)現(xiàn)防撒漏的功能。

Compliance with national food safety requirements is the most important concern for all businesses, and it is also the bottom line for businesses to choose packaging. Different dishes have different requirements for packaging. The best eating temperature of Congee is higher, which puts forward higher requirements for heat resistance and heat insulation of packaging; Light meals, salads, and healthy meals pay more attention to the convenience of packaging and packing; Western style Dim sum, cake and pastry also pay attention to the stiffness of packaging; For dishes containing soup, more attention should be paid to the sealing of the packaging, which needs to achieve the function of preventing spillage.
